This month has been very exciting for us, because Zion has transition from meals which consisted of  bits of random whole foods, to joining and enjoying dinner with us as a family!

At times this is obviously difficult, as Zion is on a limited diet with his vegan lifestyle, but being that we are both working to minimize all if any meat, specifically for my husbands MS symptoms, I have been getting creative in the kitchen with fun and healthy eats that we can all enjoy!

This week I made Chickpea Pasta, (made from chickpeas! This is amazing stuff, and so high in protein), and topped it with a quick and easy sun dried tomato and kalmata olive tapenade, I found in Tosca Renos' Eat Clean, Vegetarian Book.

This book, which I purchased a while back, is stocked full of yummy, clean and children friendly recipes.

I have been making at least  three  recipes each week in bulk to feed my family on the go, or to pack into Zions lunch box for day care.

The Sun Dried Tomato and Olive Tapenade was surprising a HUGE hit, with both my boys, and we finished of with an all fruit & nut  granola bar–warm & fresh out of the oven, also from this amazing book.

The easy to follow recipes, and legend which allows readers to decipher if the recipe fits their diet (ie. vegetarian, vegan, gluten free etc…) make this cook book perfect for moms who are cooking for families with certain restrictions.

I highly recommend the Eat Clean Vegetarian Diet, especially for those meatless mondays, or picky eaters!
