1 cooked mashed sweet potato
1/2 c raw organic oats
1/4 c melted coconut oil
1/4 c brown cane sugar (or coconut sugar) (can use up to 1/3cup)
1 c Unsweetened Almond milk (or mik of choice)
1.5 cup all purpose high fiber high omega Robinhood Flour
1 whole egg (or 2 egg whites or 1 TB flax seed ground set in 1 TB h20)
1tsp coconut flavour
1/4 tsp sea salt
1 tsp vanilla
1.5 tsp cinnamon
1/2 tsp nutmeg
2 tsp baking powder

Makes 12 muffins

*preheat oven to 400Β°
A) blend sweet potatoes, egg, oil & milk
B) combine all DRY ingredients and mix well
C) slowly add to mixing wet ingredients
D) pour evenly about 1/4 c per muffin tin




*note macros are for original recipe with egg whites and Almond milk*

* using 2 egg whites over a whole egg creates a more dense muffin*
