I am a huge fan of Daiya cheese (both in our home and on twitter, lol).  I have been using it for a while in our home, and it started in the beginning for our son when he realised he was allergic to dairy.  When I say he LOVES his DAIYA cheese, I mean he loves it.  I pack into his Bento Box every morning for daycare, a spoonful of the Shredded Cheddar, and he gobbles it up.  Here is Zion at dinner yesterday at a fancy restaurant.  Because he is a veggie-baby I always pack meals to bring out with us.  So this time I placed some of his cheese on his plate… it was obviously, Plate-licking-goodness to him! lol

When I tell you I am a mini-promoter of this yummie-ness, I am not far from the truth.  My nursing sister-in-law uses it to replace dairy from her diet for her newborn, without losing out on cheesy dishes.  I have family that are using it as a healthy way to remove cheese from their diet.  My husband and I swear by it on our nachos, burgers etc now.  And we talk about it every where we go.  The big WIN was when I made my Cheeze Enchiladas !

So for breakfast this morning I made our family a tofu-scramble.  I have to tell you, since becoming vegan my goal has been to create a tasty, scrambled egg replacement.  By-golly-gee, I think I did it, and with the help of melted Daiya Cheese on top.. it was a WINNER and a great healthy start to our families day.

Cheezy-scramble

1/2cup – 1cup  Daiya Cheese (shredded-cheddar)  The great thing about this cheese is that the taste is SO phenominal you can use LESS than regular cheese.

1 14oz package of extra-firm tofu

Spray Pam
1/2 c chopped onion
3 garlic cloves minced
1/2 tsp red pepper flakes
2 tsp cumin
1 tsp thyme
1 tsp paprika
1/2 tsp sea salt
 1/4 cup nutritional yeast

*optional chopped red peppers, green onions, etc…*

 Instructions:
Heat pan and spray with canola oil pam.
Add onions, over medium heat and saute for 2 minutes (until translucent)
Add in minced garlic saute for a couple of minutes longer
**Add in additional optional items if you like here**
Crumble tofu in the skilled (tip* press down on the tofu with a fork in the pan to crumble it, it will resemble scrambled eggs if you get the crumbles small enough)
Mix in all the seasonings
Remove from heat and sprinkle in the Nutritional Yeast
Place into four separate bowls and sprinkle DAIY Cheese over each
Heat in microwave until cheese has melted (under a minute, depending on your microwave)
